Scope of Role: Help manage the locally sourced ingredients and local suppliers. Support the head chef with marketing content to ensure the key messages are being pushed out about the food and its provenance, including via the Instagram account for the kitchen Manage the development and retention of the kitchen team, and their rotas especially during chef's absence. Lead the maintaining of GP within 70% and reduction of waste. Help get the restaurant Good Food and Bid gourmet listing, and maybe eventually our 3rd rosette. Help enhance existing and create other culinary events to draw in local business. You may lead on the "Back Patio" dining. Sous Chef Roles & Responsibilities: Assist senior kitchen team with maintaining standards and mentor their development Supervise and coordinate activities of staff within the kitchen environment Help develop new recipes and determine how to present the food Help with stock rotation and kitchen cleanliness Inspect supplies, equipment, and work areas for cleanliness and functionality Assist with training of the apprentice and lead by example Be confident with running each section accordingly Monitor and maintain all aspect of health and safety, regulation and kitchen cleanliness.
