Join one of Brighton’s most iconic venues and elevate your culinary career. Brighton i360 is home to a stunning beachfront Bar, a dynamic events kitchen, and a busy café-bar. We are looking for a talented Senior Sous Chef to support our Head Chef in delivering high-quality, creative food experiences across all outlets.
What You’ll Do
* Lead daily kitchen operations and supervise all sections during service.
* Deputise for the Head Chef, ensuring consistency in food quality, taste, and presentation.
* Train, mentor, and inspire junior chefs and kitchen staff.
* Manage food orders, stock levels, and kitchen organisation to reduce waste and control costs.
* Ensure strict compliance with food safety, hygiene, and allergen regulations (HACCP).
* Assist in the creation of seasonal menus and event-specific offerings.
* Foster a collaborative and positive kitchen culture, even under pressure.
What We’re Looking For
* Minimum 2 years' experience as a Sous or Senior Sous Chef in a fast-paced kitchen.
* Strong leadership, communication, and decision-making skills.
* A passion for food and high standards of cooking and presentation.
* Knowledge of allergens, HACCP, COSHH, and kitchen safety protocols.
* Experience with high-volume service and/or event catering is a plus.
