The Copthorne Tara Hotel is seeking a Bugis Kitchen Head Chef to lead and inspire the Bugis team. Located in the heart of The Copthorne Tara Hotel Kensington London, Bugis Kitchen is an Asian dining destination. Featuring the perfect blend of authentic Singaporean and Malaysian dishes made from locally sourced, and fresh ingredients.
Duties & Responsibilities include:
1. The direct supervision of all Bugis Street chefs
2. To ensure proper portion control, uniformity of tasks and quality for approval of the Executive Chef
3. To check on a daily basis food requisitions (fridges and stores) in order to achieve the high stock rotation desired
4. To check and carry out on a regular basis the food preparation, individual costs, quality, quantity inventories and portion control.
5. To plan menu, recipes and test samples
6. Establish job methods and supervise on a regular basis and correct if necessary, cooking standards, to maintain a high quality of food and service
7. During service periods, will personally help where needed and make a random inspection to make sure that the presentation as well as the quality of the food is correct and in accordance with the established standards.
8. To inspect daily all fresh food lines received to ensure the quality is maintained.
9. To report any maintenance problems and to follow up with the maintenance department to ensure that the necessary work is carried out.
10. To ensure that work is being conducted in a safe manner by all members of the kitchen and that apparatus is used in the correct way and in keeping with Health and Safety regulations
11. To attend any training sessions as required
12. To be fully conversant with the Hotel Fire & Emergency procedures
13. To ensure a high standard of personal hygiene and appearance at all times.
14. To know and follow the Health & Safety Work Act.
