Sous Chef We are looking for a talented Sous Chef to join the kitchen team at a beautiful luxury boutique hotel in the Scottish Highlands.
This is an exciting opportunity for a chef with strong high-end experience who is passionate about cooking with exceptional seasonal produce and creating refined, modern dishes.
The restaurant focuses on premium Scottish ingredients and elegant, produce-led cooking. The menu regularly features dishes such as hand-dived scallops, West Coast langoustines, Highland beef, Peterhead cod and seasonal vegetables, all prepared with refined techniques and thoughtful presentation.
The Role As Sous Chef you will work closely with the Head Chef to deliver a consistently high standard of food across the restaurant and hotel dining offering.
Responsibilities include:
Supporting the Head Chef with the day-to-day running of the kitchen
Maintaining exceptional standards of food quality and presentation
Leading and motivating the kitchen team during service
Ensuring smooth service in a high-quality dining environment
Managing sections and overseeing junior chefs
Assisting with menu development using seasonal and locally sourced produce
Maintaining strong kitchen organisation, hygiene and food safety standards
Supporting ordering, stock control and kitchen management
The Ideal Candidate We are looking for someone who:
Has Sous Chef or strong Junior Sous experience in high-end kitchens
Has worked in AA Rosette, Michelin-level or equivalent quality environments
Is passionate about seasonal, ingredient-led cooking
Has strong organisational and leadership skills
Thrives in a quality-driven but relaxed luxury environment
Has a genuine interest in Scottish produce and modern British cuisine
Chef de Partie We are also looking for a Chef de Partie to join the brigade.
This role is ideal for a passionate chef looking to develop their skills in a high-quality kitchen working with exceptional local ingredients.
Responsibilities Running your own section during service
Preparing and cooking dishes to a high standard
Supporting senior chefs during busy services
Maintaining high hygiene and food safety standards
Ensuring consistency and quality across the menu
Ideal Experience Previous experience as Chef de Partie or strong Commis
Passion for high-quality produce and cooking techniques
Strong work ethic and willingness to learn
Ability to work well within a small, professional team
