Senior Sous Chef – New Opening

A new French brasserie is opening in Chelsea this June. High volume, high standards, and a proper focus on classic cooking done well.
This is a key hire. You’ll support the Head Chef, help lead a strong brigade, and play a big part in shaping the kitchen from day one.
The Role
You will be second-in-command in a busy, premium restaurant.
• Support the Head Chef in leading a brigade of 16+ chefs
• Take control of the kitchen in their absence
• Be involved in menu development and seasonal changes
• Drive GP, cost control, and stock management
• Train, develop, and mentor junior chefs
• Maintain high standards across hygiene and HACCP
• Manage prep, service, and kitchen organisation
The Food
• Traditional French with Modern elements
• Premium brasserie style
• 200 covers per day
• 2–3 turns at peak
What You Need
• Proven experience as a Sous or Senior Sous Chef
• Strong background in French or European cooking
• Comfortable in high-volume, quality-led kitchens
• Confident leader with presence and personality
• Organised, calm, and consistent under pressure
