The kitchen is now being rebuilt under a new Head Chef with a strong background in top-level restaurants.
You will work directly as the number two, helping reshape the brigade and drive standards forward.
This is a genuine rebuild, not a maintenance role.

The Kitchen
Small, focused brigade:
* Head Chef
* Senior Sous Chef
* Junior Sous Chef
* 2 Pastry Chefs
The team is being rebuilt.
You will have real influence on hiring, culture and standards.
The Role
You are the key support to the Head Chef.
You will:
* Lead services and control the pass
* Train and develop junior chefs
* Assist with recruitment
* Manage ordering and stock
* Maintain food safety standards
* Support GP and cost control
This is a hands-on leadership role.
Candidate Profile
* Current Senior Sous or strong Sous stepping up
* Experience in premium, produce-led kitchens
* Background in modern European or Mediterranean cuisine
* Calm and organised under pressure
* Strong technical skills across sections
* Proven ability to lead and develop a team
* Stable career history
* Looking for long-term growth
* 90+ covers including terrace, bar and private dining

* 48 hours per week
