Job Description Sous Chef - rural Gloucestershire GL4 area £36k,service charge/tips,pension,live in,company benefits,training and development,paid O/T Presently recruiting for this luxury 4 star hotel in the glorious Gloucestershire countryside The hotel offers a 1 rosette restaurant for hotel guests as well as appealing to the local clientele and also caters to the events and wedding markets with it's beautiful location and stunning gardens in various rooms with capacity of 150 guests in the largest suite and also offers a casual dining in the hotel's spa. The main duties are to support the Head Chef and kitchen team with normal hours of being a variety of shift patters,business dependent with the occasional split shifts with a 45 hours per week with any additional days/time on agreed pro rata rate of pay or offered back as lieu time with the choice being made by the individual. As Sous Chef you will be expected to run sections in the kitchen, and report to the Head Chef. During the Head Chefs absence you will be in full control of running the kitchen. The role is made up of many varying responsibilities including: Preparing, cooking and presenting high quality dishes within the section. Assisting the Head Chef in creating menu items, recipes and developing dishes Assisting with the management of health and safety. Assisting with the management of food hygiene practices. Managing and training the kitchen team. Monitoring portion and waste control. Overseeing the maintenance of kitchen and food safety standards.
