About the Venue:
Novotel Sydney Brighton Beach is a premium 4.5-star resort-style hotel overlooking the white sandy beaches of Brighton-Le-Sands and the picturesque Botany Bay. Currently undergoing a major refurbishment, the hotel is set to become one of NSW’s leading destinations for conferences and events, boasting 11 flexible function rooms, including two grand ballrooms with a combined sit-down capacity of over 800 guests.
About the Roles:
We’re searching for talented Chef de Parties and Commis Chefs to join our passionate Conference & Events team. You’ll work across a variety of large-scale functions, plated dinners, breakfast buffets, and conference catering and will be responsible for delivering consistent, high-quality food for up to 1,200 guests across 11 beautifully designed function spaces, including two grand ballrooms.

Key Responsibilities:
Manage your assigned kitchen section with minimal supervision
Deliver high-quality food for conference catering, plated events, and buffets
Ensure consistent presentation aligned with brand and venue standards
Mentor and support Commis and Apprentice Chefs
Maintain high standards of hygiene, food safety, and HACCP compliance
Collaborate with the team to ensure smooth service during high-volume functions
Assist with food prep and cooking across all areas of the conference & events kitchen
Follow direction from senior chefs to maintain quality and consistency
Adhere to food safety standards and maintain a clean work environment
Learn and grow in a supportive, high-volume kitchen setting
Work effectively as part of a professional, fast-paced team
About You:
Certificate III in Commercial Cookery
3+ years’ post-apprenticeship experience in large-volume or hotel kitchens
Strong organisation skills and ability to lead a section with confidence
Passion for quality, consistency, and collaborative teamwork
Calm under pressure and focused on efficient execution
Completed or near-completion of Certificate III in Commercial Cookery
Previous experience in a professional kitchen preferred
Positive attitude, eagerness to learn, and commitment to excellence
Team player with strong communication skills
