Sous Chef Ready to Lead |
Were looking for a Sous Chef with ambition and soul someone ready to step into a Head Chef role and help shape the future of our intimate, ingredient-led restaurant in the East Sussex
This boutique restaurant is the culmination of many things: a vegetable garden in Co Sligo, a lifetime of family meals, a deep respect for seasonal produce, and above all, a commitment to old-fashioned hospitality. At its core, our restaurant is about generosity of flavour, of service, of time.
The Space:
Our light-filled dining room is centred around a zinc-topped counter its where we prepare, plate, and connect. Guests sit close, flowers bloom on the tables, and pink walls glow warmly throughout the day. Its a space for conversation and calm, with food always leading the way.
The Food:
We wait for tomatoes. We rest when the fish are spawning. We love winter brassicas as much as summer berries. We lean into change. Our menus evolve with whats best snacks and starters, larger sharing plates, thoughtful desserts, and a cheese plate that tips its hat to France.
The Role:
This is more than a Sous Chef role its an opportunity to grow into Head Chef, guiding the kitchen and helping evolve our offering. Youll be working closely with the owners, our gardeners, and suppliers to create a food experience that is rooted in place and time.
Were looking for someone who:
* Cooks with care, curiosity, and restraint
* Is inspired by the seasons, not just the trends
* Thrives in a small, focused, collaborative team
* Has leadership potential or is ready to step into it now
* Brings ideas to the table, but respects whats already on the plate
Why this is for you!
* Because you want to work somewhere where food matters.
* Because you want to build something personal.
* Because you want to know where your vegetables come from and who picked them. And because you believe that hospitality can still feel like home.
