Delifonseca is looking for an experienced lead catering chef to manage the outside catering team. The right candidate will be able to handle pressure on busy shifts, keeping our high standards consistent, but also work ahead prepping and planning for upcoming days. The candidate needs to have a positive, proactive attitude to working and a passion for quality food and produce.
The job will generally involve starting the day by making and producing food for outside catering jobs, the majority of which will be sandwich platters and accompaniments. In the afternoon, work will include prepping for the following days, making salads/pastries for the food hall, and batch cooking for events – this role is multi-departmental and will require the candidate to think on their feet and manage their workload accordingly. It will require managing a varying workload from periods of intense activity to quieter days that involve restocking/production and working closely with the Client Catering Manager. Fundamentally, this job involves managing the delivery of consistent, good quality food for outside catering and stocking the food hall salad counter with required products.
The kitchen is spacious and newly kitted out, with a separate sandwich room. We require someone who has relevant cheffing experience, (ideally with conferencing and banqueting experience as well) and who is used to busy kitchens. Organisation, attention to detail and high standards of hygiene and cleanliness are imperative. Some paperwork will also be required, including food safety, costings, invoice checks and job sheets. The role requires someone who does or previously has overseen stock management, rotation and ordering within the hospitality sector.
As the shifts generally start at 7am (occasionally slightly earlier), the job would suit an early riser The majority will be Mon-Fri, but occasional weekend shifts would be required for events.
We are located slightly out of the city centre by the river a few minutes from Brunswick Train Station and we have a large car park with free parking.
We offer a reasonable working week with no late nights, an equitable share of the tips and discounts in the food hall and restaurant. Salary is negotiable along with final hours in contract.
