The Opportunity
We’re seeking an experienced and motivated Sous Chef to join a talented brigade in a kitchen that consistently delivers at 3 Rosette standard. Working closely with the Head Chef, you’ll take a hands-on leadership role, driving creativity, organisation, and consistency across every service.

Your Responsibilities
 * Support the Head Chef in daily kitchen operations and oversee the team in their absence
 * Prepare and cook dishes to 3 Rosette level with precision and consistency
 * Manage your section effectively, ensuring readiness, organisation, and quality control
 * Contribute to menu development and seasonal innovation
 * Ensure full compliance with food safety, hygiene, and allergen standards
 * Maintain a clean, well-organised work environment and lead by example
 * Mentor and develop junior chefs, encouraging continuous learning and progression
 * Assist with stock management, ordering, and supplier relationships

About You
 * Proven experience as a Sous Chef or strong Junior Sous in a 2–3 Rosette or Michelin Guide-standard kitchen
 * Exceptional technical ability and a passion for high-end modern British cuisine
 * Calm, confident, and professional under pressure
 * Strong communicator and natural team leader with a supportive management style
 * Organised and detail-oriented, with pride in presentation and flavour
 * Motivated to maintain and enhance the property’s outstanding reputation
