As a Sous Chef, you will work closely with and assist the Head Chef to ensure the efficient running of the kitchen and deliver high-quality food that exceeds guests’ expectations. You will help manage stock, work within budget controls, maximise opportunities for cost efficiencies, and support the training and development of the kitchen team to achieve operational targets.

Some of the things you will be doing include:

* Assisting the Head Chef in leading, developing, and motivating the kitchen team.
* Maintaining the highest standards of food preparation, presentation, and service.
* Communicating professionally with all team members to create a positive working environment and deliver exceptional customer service.
* Overseeing aspects of kitchen management including food diaries, health & safety requirements, stock management, and staff training.
* Supporting menu planning and delivery, ensuring portion control guidelines are followed, budgets are adhered to, and profitability is maximised.
* Proactively ordering stock to ensure uninterrupted availability.
* Acting as the senior leader in the absence of the Head Chef, ensuring continuity in kitchen operations.
* Monitoring kitchen performance metrics, including waste, efficiency, and food costs, to support financial targets.
* Ensuring compliance with all food hygiene, health & safety, and regulatory requirements.
* Supporting recruitment, induction, and ongoing development of kitchen staff.
* Maintaining a clean, organised, and safe kitchen environment at all times.
* It is your responsibility to report any weakness or breach that you identify within the Company’s information systems or services (even if only suspected).
* Safeguarding is everyone’s responsibility, and you have a duty of care for your own health and safety and that of your colleagues, guests, and visitors. You must report any concerns and co-operate with management to enable it to comply with its health and safety and safeguarding accountabilities.

Some of the skills and experience we are looking for:

* Proven experience leading and motivating a kitchen team.
* Strong commercial awareness, with experience working towards budgets and KPIs.
* Ability to train and develop a kitchen team while fostering a positive departmental culture.
* Experience working in fast-paced, high-pressure environments.
* The flexibility to be able to work across varied days including weekends, evenings, and bank holidays as required.
* A passion for creating high-quality, innovative food that enhances the guest experience.
* Strong organisational, planning, and communication skills.
