The role is to assist the Senior Management in leading the team of chefs and in exceeding the culinary standards including food production, menu development, financial and food safety management targets. With the head chef, providing creative menu & food development across, Hospitality, Banqueting and Retail offers along with annual menu development, tastings and tailored bespoke menus with individual presentation as required for key clients and customers. Asist the Head Chef, Managing and guiding food production to ensure that the quality is maintained to a very high standard, minimising waste (food and personnel) and in line with our ethos of in-house production methodology. Overseeing and managing Kitchen brigades is key business areas over racing. Overseeing and Managing kitchen brigades for C&B events. Managing the kitchen brigade in line with the Head Chefs rostering. Liaise with Operations team to ensure sufficient kitchen porters and cleaner as required and within budget to maintain kitchen operations and hygiene. Ensuring compliance of key legislation and company policies & procedures are adhered to, including but not limited to; Allergens, Food Safety, Health & Safety and Calorific Deputising for the Head chef as required. Minimum 3 years experience at a senior level within the food & beverage or hospitality industry at similar venues with a proven track record of success and achievement.
