Sommelier Requirements
* Previous experience as a Sommelier within a high-end restaurant, preferably Michelin or 3 Rosette+ level
* WSET or equivalent Sommelier qualification preferred
* Hugely passionate about food, beverage, and service
* Professional and confident communication style with fluent English language ability
* Willingness to learn and be a team player, sharing your wine and beverage knowledge with the team
* Warm, friendly, and humble personality
* Enthusiastic and proactive, with impeccable attention to detail
* Desire to develop your career within an ambitious and growing restaurant group

Tom Sellers
Hailing from Nottingham, Tom Sellers is a two Michelin-starred Chef who opened his first restaurant, Restaurant Story, at 26. His innovative approach earned him a Michelin Star five months after opening, with a second star in 2021. Tom trained under influential Chefs like Tom Aikens in London, Thomas Keller in New York, and René Redzepi in Copenhagen, all before age 21. Story Cellar, inspired by Parisian rotisserie style, opened in 2023 to critical acclaim, followed by Dovetale at 1 Hotel Mayfair, offering a sustainable, produce-led menu of reimagined European classics, grilled dishes, and an abundant raw bar.
