Salary: £30,000 – £38,000 DOE + £5,000–£8,000 tronc (tips)

This Michelin Guide-listed restaurant is set in the South Downs countryside, just outside Brighton. Known for its relaxed yet refined atmosphere, it champions seasonal Sussex produce — from locally sourced fish and meat to award-winning English wines — all served in a warm and characterful setting with outdoor dining and stunning views.
As a Pastry Chef de Partie, you’ll take full ownership of the pastry section, crafting high-quality desserts and refined bakery items in a supportive, collaborative kitchen team.

Role Overview
* Lead the pastry section with ownership and precision
* Prepare and present desserts, pastries, and afternoon treats to a consistently high standard
* Work to established recipes while contributing your own creative ideas
* Maintain prep levels and ensure smooth pastry service during busy periods
* Uphold high standards of food safety, hygiene, and organisation
* Support the Head Chef and wider brigade as needed

* Experience as a Chef de Partie with strong pastry skills
* Creative flair with the precision to deliver consistency
* Passion for seasonal, locally sourced ingredients and modern presentation
* Ability to follow direction while adding your own input
* Calm, reliable, and team-oriented under pressure
