We are Looking for Senior Sous Chef with AA Rosette experience to join a highly-regarded dining pub in Oakham. This is an exceptional opportunity to lead an 6-person brigade focused on seasonal British cuisine, nose-to-tail cooking, and an uncompromising commitment to quality, fresh ingredients.

Salary & Tronc: Base salary of £40,000 + £5,000 in Tronc (Total OTE: £45,000).

The Role: As Senior Sous Chef, you will be second in command, responsible for operational leadership and maintaining the highest standards in a 2 AA Rosette professional, structured kitchen.
Cuisine Focus: Lead an 6-person brigade serving seasonal British cuisine, featuring both accessible classics and adventurous dishes.
Ingredient Focus: The menu follows an aggressively British seasonal structure alongside a strong focus on nose-to-tail cooking.
In-House Preparation: The kitchen team is responsible for the preparation of all menu items in house, including weekly butchery of whole carcasses sourced direct from the best rare breed farmers and daily caught fish.
Leadership & Logistics: Your role involves balanced kitchen management, shared responsibility, and operational support, including managing the kitchen set up, food standards, brigade, and kitchen logistics.
Chef Requirements: This position requires a confident leader who is technically proficient in all areas of cookery.
Experience: An experienced chef who is confident in all aspects of cookery.
Leadership: Must be capable of kitchen leadership and team development, supporting the Head Chef for a smooth-running operation.
Operational Skills: Direct responsibility for ordering, stock control, and mise en place.
Attitude: A passion for delivering exceptional standards and consistency with patience, and professionalism, and a willingness to share food knowledge with colleagues.
