Swandean Fresh Meats Limited are looking for an experienced butcher to join our busy catering butchery team. This is a hands-on production role for someone who takes pride in the trade, works cleanly and efficiently, and consistently delivers high-quality cuts to spec for catering orders.
Hours
* Monday to Friday:5:00am 11:00am (approx.)
* Saturday:5:00am until finish (usually 8:009:00am)
Key responsibilities & accountabilities
* High-standard cutting and preparation across relevant species (including beef, pork and poultry)
* Portion control and producing cuts to specification
* Mince and burger preparation (weighing, grinding, mixing and prep as required)
* Confident, safe use of knives and specialist equipment (e.g., mincers/grinders)
* Work efficiently in a catering environment, adapting from task to task to meet deadlines
* Maintain excellent hygiene and housekeeping, working cleanly and safely at all times
* Follow food safety processes including temperature checks, labelling, stock rotation and traceability
* Adhere to food safety standards-HACCP/CCPs maintained, reporting issues to management
The ideal candidate
* Proven butchery experience (retail, production, catering or food manufacturing)
* Strong knowledge of cuts and breakdown, with confident knife skills
* Reliable and punctual (early morning starts are essential)
* A team player with a positive, can-do attitude
* Good attention to detail and ability to follow instructions
* Physically fit for a demanding role (standing for long periods, lifting, repetitive prep)
* Able to communicate effectively in English for day-to-day teamwork and safety
Desirable (not essential)
* HACCP trained (advantage, but not essential)
* Food hygiene qualification / butchery certificate or relevant training
