About the Role: Nortons Digbeth is looking for a Lead Chef who is as passionate about kitchen efficiency as they are about great food. We aren't just looking for a cook; we need a disciplined leader who can take "ownership" of our kitchen operations. You will be responsible for leading a small, dedicated team, maintaining high-volume service standards (including our famous Full Irish Breakfasts and "Irish Pizza Menu"), and ensuring 100% operational compliance.
The ideal candidate is a tech-savvy leader who understands that a successful kitchen is built on data, compliance, and culture. We use a modern tech stack ( Zonal, Trail, Rotaready ), so you must be comfortable using these tools to drive efficiency and maintain 5-star standards.
Key Responsibilities High-Tempo Service: Lead the line during rapid breakfast service (speed and precision) and manage the logistical complexity of a high-volume Sunday Roast.
Tech-Driven Management: Full ownership of Rotaready for labor cost control, Zonal for stock and GP management, and Trail for rigorous compliance and food safety logs.
Compliance Leadership: Maintain a "Gold Standard" kitchen. You will ensure every digital check is completed on time and that the kitchen is always audit-ready.
Team Stability: We need a professional who resolves issues face-to-face. You will be expected to mentor your team and reduce staff turnover through clear communication and organized shifts.
Commercial Performance: Manage waste, portion control, and labor margins to hit ambitious but achievable KPIs.
Your Experience The "Engine Room": You must have experience in a fast-casual or high-volume pub/restaurant environment where "busy" is the norm.
Tech Proficiency: You are comfortable with Zonal BOH, Trail, and Rotaready (or very similar systems). You understand that digital logs are non-negotiable.
Sunday Excellence: You know how to manage a roast service that is both high-quality and high-output without the kitchen collapsing.
Conflict Maturity: You handle staff disagreements with professional poise, ensuring that personal issues never impact service or attendance.
