Key Responsibilities:
10. Lead, motivate and develop the front-of-house team
11. Oversee service from breakfast through to evening dining
12. Deliver warm, professional and genuinely friendly service
13. Manage rotas, labour costs, stock control and supplier relationships
14. Work closely with the kitchen and wider hotel team to improve performance
15. Support recruitment, onboarding and training
16. Drive private dining and group bookings
17. Maintain strong knowledge of food, wine, cocktails, spirits and coffee
18. Ensure service remains polished, relaxed and guest-focused
19. Help maintain the standards expected of a rosette dining operation
What we’re looking for:
20. Proven experience as a Restaurant Manager or strong restaurant leader
21. A genuine passion for hospitality and creating memorable experiences
22. Good wine, cocktail, spirit and coffee knowledge; WSET Level 2 would be advantageous
23. Strong people management and organisational skills
24. Commercial awareness with a guest-first mindset
25. A warm, approachable and confident leadership style
26. Flexibility to work mornings, afternoons, evenings and weekends
27. Reliable transport due to the village location just outside Tenby
28. The right to work in the UK
