Role and responsibilities:
* A skilled member of the Butchery team
* All aspects of butchery for carcass and primal breakdown work with Beef, Lamb, Mutton, Pork, Venison and Poultry.
* Assisting Small Goods production of sausages, burgers, mince and stuffings when required
* Intake process controls, quality checks and grading of carcass deliveries
* Hanging fridges organisation and carcass transfers
* Issuing, weighing and labelling of all produce in line with works orders
Requirements:
* A highly skilled butcher with a passion and understanding of sustainable farming
* Knowledge of FSA requirements
* A safety-first approach to working
* Confident working in a team and independently
* Excellent verbal communication skills.
* Maintain a positive and professional working environment
* Full ownership, responsibility and accountability for the role
* Be flexible and prepared to do whatever is required
Job Skills & Qualifications:
* Minimum 5 years' experience as a butcher
* Excellent practical butchery skills
* Knowledge of food safety requirements
* HACCP trained
* Knowledge of FSA requirements
* Knowledge of food planning systems
* Attention to detail, quality and pace at all times
