* Lead and develop the kitchen team, ensuring individual development plans.
* Manage food margins, wastage, and labour through rotas to hit budget targets.
* Maintain 5* hygiene standards and keep the team audit-ready at all times.
* Prioritise guest experience and deliver exceptional, authentic service in a fine dining environment.
Requirements / Qualifications
* Proven experience in a senior kitchen role with leadership responsibilities.
* Strong passion for detail, innovation, and fine dining cooking skills.
* Experience managing margins, wastage, and labour costs.
* Demonstrated ability to maintain high hygiene standards and pass health audits.
