Sous Chef - Lasdun | National Theatre London
£45,000 per annum (£30k Basic + £15k TRONC)

About The Role
1. Prepare and execute all menu items to specification.
2. Work closely with the Head Chef to ensure quality control is monitored and maintained.
3. Assist with organising the culinary team daily/weekly tasks.
4. Confidently lead the team in the absence of the head chef to cover senior responsibilities.
5. Ensure par levels of menu items are available across all outlets.
6. Maintain understanding of stock control, placing orders, and maintaining par levels.
7. Carry out regular stock counts for the culinary department.
8. Adhere to all business & HSE policies.
9. Complete relevant H&S paperwork and insightful end-of-night reporting.
10. Communicate effectively with FOH Event Operations team.
11. Line management of culinary team including CDPs & Commis chefs.
12. Hands-on approach to training with the culinary team.
13. Brief allergens and other key dietary information clearly and effectively.
14. Conduct regular health & safety audits of culinary areas.
15. Ensure compliance with food safety and general HSE requirements.
Requirements
1. Confident: Sound understanding of all menus, capable of delivering a wide range of restaurant operations.
2. Detail-focused: Highly organised individual.
3. Flexible: Open to adjusting working patterns within reason, as relevant to business requirements.
4. Follow process and procedures to ensure smooth delivery of daily operations, including planning, to ensure all team members have the right information.
5. Curious: Passionate about bringing ideas to the table and developing skills, with a long-term goal to grow the project.
6. Financial Acumen: Manages stock, wastage, staffing levels according to business needs.
7. Safety Led: Leads by example on all HSE practices and implements best practices.
