We are seeking a highly motivated and experienced Deputy General Manager to oversee the daily operating of our hotel & restaurant, supported by the owners Daniel and Annie, who are driven, hardworking, and incredibly creative. The ideal candidate will possess strong leadership skills, extensive hospitality experience, and a passion for delivering exceptional guest service. This role involves managing various departments, ensuring operational efficiency yes, but more than anything else it is giving our guest an exceptional experience, offering a sense of place, a welcome, and maintaining high standards of food safety and customer satisfaction. Previous experience in restaurant or culinary environments is essential. This role is certainly for someone that loves hospitality and not desk based. We all strive for our Michelin star and need a key leader to help us reach this goal. There is already a very good team in place and one that Daniel and Annie look to build upon. They wish to have a little more balance and will offer the perfect candidate that back in return. The successful applicant will play a key role in fostering a welcoming atmosphere and ensuring the smooth running of all hotel operations from breakfast service and a beautiful welcome to the fine dining experience of the gunroom restaurant. Plas Dinas Country House is a multi-award-winning hotel and has been awarded best hotel in wales at the good hotel guide awards 2026, Visit Wales best hotel in wales and best place to eat in wales 2025, we are in the michelin guide, chef was a finalist on great British menu in 2025, we were awarded Condé Nast Johansens Best For Romance 2025 and Best Hotel in North Wales 2021 2024. Annie has since joined as an advisor to the board and stepped away from the north wales awards. We truly are passionate, but we have a missing piece of the jigsaw. It is an exceptional place and we really are looking for someone to bring with them in built hospitality. Michelin experience is not essential but someone with a knowledge of wines or interest in fine dining would be an advantage.
Duties
Look after our guests, first and foremost, we love hospitality and this is not desk based as such. Yes there is reception duties and yes it can be busy, but the role really is about looking after our guests. It including reception, afternoon tea and the gunroom dining experience, working with our housekeeping manager to ensure standards are impeccable.
This is a place like no other. We receive great feedback already, you would not be starting from scratch with a new team, but with a team who work incredibly hard to deliver exceptional hospitality. Memory making is at the core of what we do.
Elevate our FOH and dining team training to ensure we meet Michelin standard dining, providing guidance, training, and performance evaluations to ensure high standards of service. Service needs to be attentive and making memories at the forefront of what we do.
Manage food preparation working alongside our award-winning head chef. Ensuring compliance with food safety regulation is being adhered to.
Coordinate with kitchen staff to oversee food production, presentation, and quality control. Ensuring the storytelling of the dish is well rehearsed and the team are able to describe the dish confidently. Training the team to have a well-rounded knowledge of the dish.
Ensure excellent guest experiences by looking after the guest like you are welcoming your friends back home. Resolving issues promptly and maintaining a welcoming environment. We dont do robots, we do true hospitality where guests come first.
Implement health and safety policies across all departments, with particular focus on food safety and hygiene standards.
Monitor inventory levels for food, beverages, and supplies; organise procurement as necessary.
Lead by example in delivering exceptional hospitality services, including serving guests when required.
Organise staff schedules to optimise coverage during peak periods while maintaining labour costs.
Maintain compliance with legal requirements related to hospitality operations and employment law.
Skills
Proven management experience within the hospitality or restaurant industry. If you only have restaurant management experience and not the full hotel experience, then this may be a great place to start. We have worked in incredible places and we can help you transition into a full hotel role. We only have 11 bedrooms so it is not overwhelming, but you are walking into a place that needs you to care.
Strong team management skills with the ability to motivate staff and foster a positive working environment. Brining up the level of service to a consistent Michelin level.
Experience in restaurant management or hotel management is essential.
Wine knowledge is desirable but not essential.

We are looking for someone that Annie and Daniel can work alongside to take Plas Dinas forward. They are an exceptional team and have transformed the country house and restaurant into an award-winning property. They have very little balance currently and are really looking for someone to work alongside who they can in turn offer balance to. They are exceptionally driven but the team and the guest are at the heard of this business and they truly care about everyone and every aspect of the business. It is their life but they have children and need someone that is driven but whom cares wholeheartedly about the business they have created.
