At Secret Smokehouse, you’ll work directly as part of the production team, filleting all the fresh salmon, trout, haddock, mackerel, and herring that arrive each day, while maintaining high hygiene standards.
Working hours are from 7am/8am to 5pm (40-45 hours per week) with no night shifts.
The role of filleter/fishmonger/blocksman involves filleting to an extremely high standard and managing large quantities of fresh fish at our East London production unit. The ideal candidate will possess exceptional filleting skills, good communication skills, and relevant experience.
The candidate will report directly to the General Manager and must notify of any damaged or unsatisfactory fish upon arrival. Due to our high operational standards, hygiene & cleanliness are paramount, requiring good teamwork skills to work effectively with the KP to ensure the block is always kept at a high standard of cleanliness.
Roles & responsibilities include:
1. Excellent knife skills
2. Fillet to the high standards specified by the Secret Smokehouse
3. Responsible for high-yield fillets at all times
4. Ensure the block is tidy and clean during and after fish preparation
5. Work closely with team members, especially the KP
6. Maintain and report any damaged or dull knives
7. Provide staff fillet training
8. Adhere to food safety standards, particularly regarding cross-contamination
9. Use correct cleaning chemicals (training provided)
10. Manage carcass yield recovery
In addition, you will be trained to assist with other production tasks such as curing, smoking, pin-boning, slicing, and packing of smoked fish.
Desired qualities include good communication skills, willingness to learn, teamwork, organization, hygiene, and punctuality.

Full-time position with an immediate start. Hourly rates vary depending on age and experience. Each application will be considered individually and discussed during the interview process.
