Food and Beverage Manager – King Street Townhouse Hotel & Spa
Reports to: General Manager
Role Purpose
The Food & Beverage Manager is a senior operational leader responsible for driving service excellence, commercial performance, and guest experience across all F&B outlets at King Street Townhouse Hotel & Spa. This highly operational, floor‑focused leadership role requires constant visibility during service. The F&B Manager leads from the front, taking ownership of live operations, shift leadership when required, and ensuring exceptional standards are delivered consistently across restaurant, bar and events. The role also requires hands‑on involvement in conferences, private dining and weddings, ensuring seamless execution of all high‑profile events.
Key Responsibilities
* Hands‑On Leadership & Shift Ownership
* Maintain a continuous floor presence across all F&B outlets during service
* Act as shift leader when required, taking full responsibility for live operations
* Lead from the front through active coaching, direction and real‑time decision making
* Conduct pre‑service briefings, live coordination and post‑service debriefs
* Ensure operational alignment across all service periods and departments (weekly operations and department head meeting)
* Guest Experience & Luxury Service
* Deliver exceptional, personalised guest experiences aligned with 5‑Star boutique luxury standards
* Anticipate guest needs with a proactive, emotionally intelligent approach
* Maintain consistently high service standards across all F&B outlets
* Champion attention to detail, consistency and personality in service delivery
* Food & Beverage Operations
* Oversee restaurant, bar and banqueting operations
* Work closely with the Executive Chef, Head of Pastry and Bar Manager to ensure quality, timing and presentation standards
* Implement, maintain and ensure consistent adherence to SOPs, brand standards and operational procedures
* Maintain full operational readiness across all outlets at all times
* Events, Weddings & Banqueting
* Take a hands‑on leadership role in conferences, private dining and weddings when required
* Lead or support live event delivery to ensure flawless executionCoordinate closely with kitchen, events and sales teams for seamless delivery
* Act as senior operational lead during key or high‑profile functions
* Ensure all events reflect the boutique luxury positioning of the hotel
* Team Leadership & Culture
* Lead, coach and develop the F&B team through daily visible engagement
* Build a high‑performance, guest‑focused culture rooted in pride and accountability
* Support recruitment and onboarding with a strong focus on attitude and service mindset
* Foster a respectful, inclusive and motivated team environment
* Financial & Commercial Performance
* Drive revenue growth and profitability across all F&B outlets
* Manage labour, stock and cost controls effectively
* Optimise rota planning in line with business levels
* Ensure accurate billing, stock management and waste control
* Balance commercial performance with uncompromising guest experience
* Standards, Compliance & Operational Excellence
* Ensure full compliance with food safety, hygiene, licensing and health & safety regulations
* Uphold luxury boutique brand standards across all F&B areas
* Maintain immaculate presentation and operational readiness at all times
* Ensure consistent SOP adherence and audit readiness
* Leadership & Collaboration
* Work closely with the General Manager and Head of Sales and Revenue as part of the senior leadership team
* Communicate effectively across departments to ensure seamless guest experience delivery
* Contribute to operational planning and strategic decision‑making
* Lead with calm authority, professionalism and emotional intelligence
Key Attributes & Experience
* Experience in luxury 4★/5★ or boutique hotel F&B operations and restaurants
* Strong background in hands‑on, floor‑based leadership and shift management
* Proven ability to lead or support live events, weddings and private functions
* Confident operating in high‑pressure, service‑led environments
* Strong commercial and operational awareness
* Exposure to AA Rosette / Red Star / LQA environments desirable
* Strong leadership presence, communication skills and emotional intelligence
