Caer Llan is a beautiful family run country house wedding and events venue set in a stunning countryside location just 4 miles outside of Monmouth. We are primarily a wedding venue, but we also host conferences, parties and family events.
We are seeking an experienced, calm and highly organised chef to lead our kitchen and be part of our small close knit team at Caer Llan. The role centres on delivering exceptional pre-ordered food for weddings, corporate events and private functions in a well run (5* scores on the doors), respectful kitchen environment.
You will be responsible for producing exquisite wedding breakfasts, relaxed yet polished evening BBQs and buffets and breakfast service for guests. This is not a shouty kitchen or work place, its a place for positive thinking and a can do attitude.
Key responsibilities will include:
Prepare and deliver high quality food consistently and on schedule according to the event diary and with precision and professionalism
Preparation of banquets, wedding breakfasts and BBQs and informal dining, all prepared and served with the same care and attention as formal service. Also preparing and serving breakfast to resident guests.
Menu planning with the business owners and event manager
Manage preparation and service in a mid-sized kitchen but with limited space for multiple chefs.
Liaising with colleagues and business owners in a close knit team working to deliver a high quality product
Kitchen management, with particular attention to Cleanliness, Hygiene, Food safety, allergen management, Health and safety and record keeping as per UK food safety regulations and our own in house policies.
Stock Control, costing of menus and ordering whilst minimising food waste
Training & welfare of junior kitchen staff:
Ensuring health and safety protocols in the kitchen among other staff.
Assisting with rotas
About You
Minimum 5 years experience working in a busy kitchen environment but also with some banqueting experience.
Excellent Kitchen Management skills
Excellent communication and organisational skills
Enthusiasm and motivation for working in a hard working but friendly and ethical workplace.
Punctual, reliable and consistent. Attendance and time keeping are essential.
Passionate about producing excellent food with a calm temperament.
Relevant food safety and hygiene certificates including allergen awareness and basic first aid training.
A clean full driving licence with own transport in place.

We are looking for a chef with a genuine passion for great food. Someone who is keen to work within a small, dedicated team, in a family run business. Someone who is 'hands on', reliable, hardworking, calm and is keen to be part of something that they can be proud of.
As this is a hospitality business working hours are according to the needs of the business. There is a definite seasonal trend and so the summer months are very busy with more like 40-60+ hours per week. The winter months are however quieter with lots more time off, paid in lieu from the busier summer months. Salary is therefore based on average 40 hours per week averaged over the course of the year. Includes 5.6 weeks paid annual holiday leave.
Annual salary is £40,000 paid via PAYE in 12 x monthly payment
