Hours: 45 hours per week, 5/7 (evenings & weekends required)

Dunalastair Hotel Suites is a five-star, 32-suite boutique hotel in the Scottish Highlands, recently relaunched under new management in March 2026 as part of The Rannoch Collection. The property has entered an exciting new chapterblending contemporary luxury with whimsical nods to its Victorian sporting-lodge heritage.
Were now looking for an exceptional F&B Manager to help embed standards, shape culture, and continue building a high-performing team in a newly relaunched 5* environment.
The Role As F&B Manager, youll lead a relaxed-luxury operation delivering true 5* service across:
Breakfast, lunch, afternoon tea, dinner and room service
A 50-cover fine dining restaurant and bar
Signature concepts including: The Tipsy Stag (Bar & Lounge)
The MacNab Restaurant (Scottish larder, produce and game)
Reporting to the Hotel General Manager, this is a hands-on, guest-facing, standards-led roleideal for an F&B Manager who thrives in luxury hospitality and loves building teams and service culture.
Key Responsibilities Lead day-to-day food and beverage operations to consistently deliver 5* service
Recruit, train and develop the team as part of the post-relaunch journey
Create and implement training programmes (service steps, standards, upselling, product knowledge)
Drive fine dining excellence and guest experience on the floor
Own beverage standards across wine, cocktails and Scottish whisky (knowledge is imperative)
Support menu and beverage development with senior leadership and the kitchen team
Maintain strong controls: stock, ordering, GP, supplier relationships and compliance
Ensure licensing, H&S and food safety standards are met at all times
Handle guest feedback professionally and proactively, turning issues into loyalty
About You Proven experience as an F&B Manager (or a strong deputy ready to step up) in 5* / luxury hospitality
Fine dining experience at Rosette level or above (or equivalent)
Luxury country house hotel experience is ideal
Comfortable working in a remote location where standards and planning matter
Strong wine knowledge: WSET Level 3 preferred (minimum Level 2)
Confident cocktail knowledge and premium bar standards
Scottish whisky expertise and the ability to engage guests with recommendations/tastings
A natural leader who loves coaching, training and building a service culture
High attention to detail, calm under pressure, consistently professional
Flexible to work evenings, weekends and peak periods
