Role Overview As Head Chef, you will lead and define the culinary direction of a newly renovated country pub aiming for exceptional dining experiences. You will partner with an owner who has extensive experience in F&B, to create a differentiated menu that combines seasonal, locally sourced ingredients with refined technique and outstanding service.
Key Responsibilities Develop and execute a compelling fine-dining menu within a country gastro-pub framework
Lead, mentor and manage the kitchen team; recruit, train, and retain top talent
Oversee all kitchen operations: mise en place, service, plating, and quality control
Manage food costs, portion control, menu costing, and budgeting to maximise profitability
Menu development in line with seasonal, local produce and wine pairings
Maintain exceptional food safety and HACCP standards; ensure all legal compliance
Collaborate with the owner on F&B strategy, wine programme, and guest experience
Drive supplier relationships, sourcing, and sustainable practices
Implement and uphold brand standards, service timing, and quality for a memorable guest journey
Prepare for and support a successful July opening
Candidate Requirements Proven Head Chef experience
Strong track record in fine dining and high-end dining concepts
Passion for seasonal menus, local sourcing, and pairing dishes with wines
Leadership and team development skills; ability to inspire a small, dedicated brigade
Excellent organisational, costing, and budgeting abilities
Strong knowledge of food safety, hygiene, and regulatory requirements
