We are looking for someone with a true passion for food who will be responsible for the day-to-day management, preparation, and service of all food within the hotel. Ensuring the highest standards of quality and service are maintained at all times and that strict food hygiene controls are enforced in all areas of the kitchen.
You will be second in command to the Executive Head Chef Rob Potter, who gained his Michelin star in 2016 and has retained it year on year.
Role Responsibility
Lots to do but lots of fun
Reporting to the Executive Chef, the Senior Sous Chef will be responsible for:
1. Ensuring the smooth running of kitchen operations at all times
2. Management of stock control and procedures
3. Managing communication within the kitchen and with other departments
4. Assisting the Executive Chef in menu writing and planning, and proactively assessing industry trends and initiatives for your section
5. Ensuring the standard of food and service are executed to the highest level at all times
6. Running the kitchen in the absence of the Executive/Head Chef
7. Adhering to all financial aspects of kitchen management, including costings within budgeted guidelines
8. Managing food flash, invoice processing, and revenue figures in the absence of the Executive Chef
9. Controlling food wastage
10. Maintaining the highest levels of food hygiene and health and safety at all times
11. Setting professional standards of conduct throughout the kitchen
12. Ensuring every new starter follows a comprehensive induction plan within their first three months
13. Supporting and monitoring training and development of all kitchen staff

* Extensive high-volume kitchen experience within a hotel, venue, or restaurant sector, at a minimum of 3 Rosette or 1 Michelin star
