Food and Beverage Manager – Campus Services – 106547 – Grade 5
Position held within the Campus Services Business and Operations department, responsible for overseeing a range of outlets from coffee shops and bars to large restaurants, providing hospitality services for conferences and campus events. Lead a team to deliver excellent customer service, plan and deliver financial targets, and support university-wide initiatives across all campuses.

Salary range: £29,647 – £31,460 per annum (potential progression to £35,388)

Role Summary
You will be responsible for leading a team to deliver excellent customer service in any one of those areas/outlets and for planning and delivering to key performance indicators once the budget has been set. Our Food and Beverage Managers provide proactive support to our Senior Management Team and to the Food and Beverage team's success. As a Food and Beverage Manager, you will be responsible for creating a plan to deliver all financial targets, driving sales, promoting and growing the unit, and proactively developing and motivating your team to create a multi‑skilled workforce.
Main Duties
* Ensure that areas within your area of responsibility are set up and operated in accordance with Standard Operating Procedures and Brand Guidelines.
* Ensure that all operational and standards audits are passed.
Financial
* Create and deliver a sales plan to achieve the sales target for the unit.
* Control all associated costs: staff costs, casuals, gross profit %, maintenance & repairs, consumables and other controllable costs.
* Manage the operation of the stock system to deliver great product availability while minimising waste. Support the analysis of monthly stocktakes and determine actions to drive gross profit percentages.
* Deliver all event activity on time and within budget constraints.
* Monitors all cash handling and till/system functions to ensure accuracy and consistency. Investigate and take appropriate actions to address non‑compliance and implement robust systems to prevent future breaches.
Safe Ways of Working
* Operate your area of responsibility safely and efficiently. Take remedial action to correct any breach of procedure and implement plans to prevent future reoccurrences.
* Ensure that the agreed standard of food and beverage service is delivered at all times, meeting all legal requirements and quality standards.
* Comply with licensing law when serving alcohol and ensure team compliance.
* Audit the units regularly to address potential or developing problems as they arise and become more serious. Implement action plans based on findings and ensure remedial actions are corrected and training provided to prevent repeat occurrences.
* Ensure that all facilities are maintained and operational. Escalate issues that cannot be rectified to your Manager.
* Overall responsibility in the Unit for adherence to all work rules and codes of practice including:
o Health & Safety codes of practice
o Control of substances hazardous to health (COSHH)
o Hazard Analysis and Critical Control Point (HACCP) hygiene and allergen recording systems
* Ensure that all administration and paperwork is completed professionally and timely.
Leadership
* Ensure adherence to University HR policies, procedures and relevant employment law for all staff.
* Set goals and objectives for staff, developing organisational capability and modelling collaborative working.
* Display a “customer comes first” attitude, training and supporting staff to deliver the same approach.
* Anticipate customer and unit needs, constantly evaluate environmental and customer needs and communicate to line manager.
* Collect, process and act on customer feedback.
* Provide coaching and direction to the team to achieve operational goals.
* Constantly review working environment and key business indicators to identify problems and opportunities for improvement.
* Deliver rolling training plans for new and existing team members, recording all training in in‑house systems.
* Hold regular job chats and performance reviews with direct reports and ensure they are completed to a good standard.
* Implement University HR policies around absence and performance management within your team and consult with HR Advisory staff as appropriate.
* Support equality and diversity, moderating behaviour to avoid bias.
* Deputise for your Manager as required.
Operational Requirements
* Work on a 35‑hour week on a rota basis, including weekend and evening work to align with Campus Services and University requirements.
* Participate in the BOPS duty management rota (7/365).
* Undertake works activities across all UoB campuses as requested in support of the Division and wider UoB activities.
Required Knowledge, Skills, Qualifications, Experience
* NVQ Level 3 (or equivalent) in a relevant subject area or demonstrable knowledge gained through commercial food service experience.
* Literacy and numeracy skills evidenced by Mathematics and GCSE grade C/4 or equivalent.
* Considerable supervisory or management experience within a commercial food service and preparation environment.
* A current Food Safety Level 4 certificate.
* Full, clean driving licence desirable (may involve driving University vehicles).
* Current Personal Licence holder for the sale of alcohol (or willingness to obtain).
* Ability to develop sales and service plans to grow the business.
* In‑depth knowledge of Health and Safety at Work Act, HACCP, COSHH, waste disposal, fire procedures, and ability to lead others to comply.
* Proficiency with Microsoft Office suite.
* Clear and concise communication skills; friendly and courteous manner toward customers.
* Excellent organisational skills with the ability to lead a team and meet deadlines.
* Highly motivated, team‑player able to engage across multiple student and staff groups under pressure.
* Understanding and ability to respond to equality and diversity issues in line with university policies.
