Role Overview
At Mar Hall, we are on an exciting journey to elevate our guest experience towards Forbes Travel Guide luxury standards. We are seeking a highly skilled and hands‑on Bar Manager / Head Mixologist to lead our bar offering, shaping a refined and memorable beverage experience that complements our wider food and beverage operation.
This is a key operational leadership role for someone who is as comfortable creating exceptional cocktail menus as they are leading service from the floor. You will take ownership of our newly refurbished bar spaces, driving standards, developing your team, and embedding a culture of excellence and professionalism.
Reporting to the Food and Beverage Services Manager, and working collaboratively with the Assistant Managers and wider team, you will play a vital role in delivering a seamless and elevated guest journey across all outlets.
Key Responsibilities
Bar Leadership and Operations
* Lead and oversee the daily bar operation, ensuring a smooth, efficient, and high‑quality service
* Be highly visible on the floor, leading by example and delivering exceptional guest engagement
* Take full ownership of the bar environment, ensuring presentation, atmosphere, and service reflect luxury standards
* Support wider food and beverage operations as required, demonstrating flexibility across service periods
Beverage Expertise and Menu Development
* Design and deliver innovative and commercially balanced cocktail menus aligned with the JA Mar Hall brand / story
* Continuously evolve the beverage offering, incorporating seasonal trends, premium spirits, and guest preferences
* Maintain a high level of knowledge across spirits, cocktails, wine, champagne, and non‑alcoholic offerings
* Ensure all beverages are prepared and served to a consistently exceptional standard
Standards and SOP Development
* Create and implement SOPs from scratch for all aspects of bar service
* Embed clear standards of behaviour, presentation, and performance within the team
* Lead the refinement and elevation of service standards in line with Forbes expectations
* Ensure consistency in execution across all shifts and team members
Team Leadership and Development
* Lead, coach, and develop the Bar Supervisor and bar team
* Deliver training to enhance product knowledge, service style, and confidence
* Set clear expectations and hold the team accountable for performance and standards
* Foster a professional, motivated, and high‑performing team culture
Collaboration and Guest Journey
* Work closely with restaurant, breakfast, and events teams to ensure a seamless and joined‑up guest experience
* Support the delivery of weddings, events, and special occasions where bar service is required
* Build strong relationships across departments to enhance overall service delivery
* Whilst bar operations is the main focus of this role – being part of the F&B management team would require flexibility in supporting all aspects of food & beverage service when required
Commercial and Operational Awareness
* Support stock control, ordering, and management of beverage costs
* Contribute to revenue growth through menu design, upselling, and guest engagement
* Maintain awareness of business performance and support achievement of financial targets
Standards and Compliance
* Ensure full compliance with licensing laws, health and safety requirements, and company standards
* Maintain exceptional cleanliness, organisation, and presentation of all bar areas
* Support the implementation of brand standards and the journey towards Forbes luxury expectations
About You
* Proven experience in a bar leadership or head mixologist role within a luxury hotel or high‑end venue
* Strong operational focus with a passion for being present on the floor
* Expert knowledge of spirits, cocktails, and wine, with creativity in menu development
* Experience in building and implementing SOPs and service standards
* A confident leader with the ability to inspire and develop a team
* Excellent attention to detail and commitment to delivering exceptional guest experiences
* Strong communication skills and ability to collaborate across departments
* Flexible and adaptable within a fast‑paced, evolving luxury environment
