As a Sous Pastry Chef, you will be required to work 5 days over 7 and 45 hours per week.
At The Gherkin, you will be required to be adaptable as the venue is diverse and at any time will have multiple events happening across a number of floors. You will be supporting the Head Chef to manage the day-to-day service, whilst leading and mentoring the junior team to deliver high-end events and exceptional quality food.
Salary: Up to £45,000 inclusive of Tronc
Contract Duration: 8 Months
Key Responsibilities:
* Manage the day-to-day running of the Pastry section within the kitchen.
* Monitor the standards achieved daily and report any concerns to the Head Chef.
* Liaise with the Operation Manager and, in their absence, the Deputy Operation Manager.
* Ensure adherence to all legislative and Government guidelines, including The Food Safety Act, Health and Safety at Work Act, and COSHH regulations.
* Monitor that all staff present themselves correctly dressed for duty.
* Ensure all services are ready for operation at the specified time, to the standards laid down in the Catering Policy Document.
* Ensure staffing levels reflect the peaks and troughs of business operations and maximize staff utilization.
* Ensure all sundry expenditure is within the agreed budget for the area.
* Oversee food purchasing.
* Ensure all personnel procedures are followed in accordance with Investors in People standards.
* Address any legal requirements.
* Complete any other reasonable requests from Senior Management.
Qualifications:
* Very well organized with the ability to prioritize workload.
* Ability to work under pressure.
* Excellent standards.
* Experience in working in a 5-star hotel or Michelin star restaurant is desirable.
* Able to work effectively as part of a team.
* Attention to detail.
* Strong communication skills.
