The Role
Brewski is looking for an experienced pitmaster to join the team at our new venture - Big Tray BBQ. You will be working alongside our executive chef and head chef to produce some of the best Texan style BBQ food possible.
We will be making our own sausages from brisket trim, making beef tallow, smoking birria lamb shoulder, peach glazed pork ribs as well as orange and thyme buttered turkey and making all of our own sauces, seasonings and sides etc.
We aim to make pretty much everything on site to give a sense of ownership and pride in the food and to ensure that everything is as high quality as possible.
Part of the role will also be working alongside and training a trainee pitmaster so showing an ability to share your passion and train another member of staff is a must.
The role is salaried for 45 hours per week over 5 days and any overtime after the 45 hours is fully paid. Standard working hours would be 6am-3pm with obviously some scope for other shifts if needed.
All members of staff get an equal share of the tronc and cash tips and we also provide a yearly loyalty bonus of £1000 on the anniversary of your starting with us.
Responsibilities
* Ensure the highest possible food quality is being served
* Ensure compliance with food safety regulations and maintain cleanliness throughout the kitchen
* Oversee inventory management, including ordering supplies and monitoring stock levels. This will be very important due to both dry and wet brining some of our products so we need to have a good handle on when items need to be ordered/delivered
* Train and develop new staff members
* Foster a positive team environment through effective communication and team management
* This will be a customer facing role and will require a professional approach so you will be required to look presentable at all times
Experience
* Proven experience in a pitmaster role within a BBQ restaurant
* Demonstrated leadership skills with the ability to motivate and manage a diverse team
* Knowledge of food safety practices and regulations is required
* Excellent interpersonal skills and ability to communicate effectively
* Knowledge of brining preferable
* Any butchery skills would be advantageous
