Purpose of Role
To work opposite the Head Chef To organise and control the efficient and economic production of quality food within the allocated budget, whilst maintaining high standards of cleanliness and hygiene in line with EHO regulations.

Key Responsibilities & Accountabilities
Food Preparation:
Prepare, cook and serve hot and cold meals safely and efficiently, as and when required.
Provide for special dietary requirements including diets for diabetics, renal diets, high calorie, high protein etc.
Cater for soft and /or blended diets where necessary, and take into account the medical, cultural and religious preferences of individual residents.
Ensure all food is stored correctly and that the food preparation area is kept clean and tidy
Communication:
Liaise with the Registered Home Manager when planning / costing menus in order to provide a balanced nutritious diet, making the best use of available fresh foods.
Arrange / participate in Staff and Resident/family meetings as required and contribute ideas for the home.
Support the implementation and delivery of an activities programme to individual and groups of residents ensuring that all residents participate in some form of activity daily
Continuously, but at least daily, consult with residents, staff and relatives as to satisfaction and preferences for food and drink, record and plan based on their feedback
Organise kitchen rostering, conduct and minute regular kitchen team meetings and perform staff supervision at least bi-monthly
Keep all written records as in accordance with regulations
At all times remain person focused and family aware to ensure that individual likes, needs and wants are met
Budgetary / Financial Control:
Ensure stock rotation.
Maintain efficient operation of kitchen with agreed budgets and contribute to regular reviews of budgets and offer inputs and advice as required.
Participate in annual budget setting for the kitchen
Human Resources and Training:
Remain flexible in shift/working patterns to meet the needs of the home
Supervise and instruct Kitchen Staff Members in the use of all equipment and hygiene procedures, giving help and guidance where appropriate.
Attend mandatory training days/courses, on or off site, as and when required.
Ensure and facilitate kitchen staff training days/courses where required
Health & Safety;
Ensure statutory Health and Safety standards in the kitchen and dining areas.
Maintain accurate records of food supplies, and freezer / fridge temperatures.
Ensure all crockery and equipment is cleaned and stored appropriately, and that the overall cleaning of the kitchen area (and, where appropriate, the dining areas) is carried out effectively.
Report immediately to the Registered Home Manager, or Person in Charge, any illness of an infectious nature or accident incurred by a resident, colleague, self or another and complete recordings and notifications as per legal requirements.
Report to the Home Manager, or the maintenance person, any faulty appliances, damaged furniture, equipment or any potential hazard and maintain a written record of hazards and risks as per requirements
Promote safe working practice in the home
General:
Promote a positive personal / professional profile within the local community, ensuring the good reputation of the home at all times.
Ensure both personal appearance and cleanliness of self and kitchen team at all times
Ensure that all information of confidential nature gained in the course of duty is not divulged to third parties.
Ensure the security of the home is maintained at all times
Adhere to all Company policies and procedures within the defined timescales.
Carry out any other tasks that may be reasonably assigned to you.
