Job Purpose:
To oversee the daily operations of a small-scale food production, butchery and bakery units, ensuring production targets are met efficiently while maintaining the highest standards of food safety, quality, and hygiene. The Food Production Manager will manage a team of production staff, coordinate workflows, and ensure compliance with food safety regulations.
Key Responsibilities:
* Supervise daily production activities, including baking, packaging, and dispatch.
* Plan and allocate production tasks to meet daily and weekly output targets.
* Monitor product quality and consistency across all bakery and food items.
* Ensure adherence to food safety standards (e.g., HACCP, local health regulations).
* Maintain accurate records of production, stock, and wastage.
* Conduct regular quality checks and ensure corrective actions are implemented.
* Manage raw material and ingredient inventory, coordinating with procurement.
* Train and supervise production staff on processes, equipment, hygiene, and safety.
* Assist in the development of new recipes or products in collaboration with R&D or head baker/chef.
* Maintain and troubleshoot basic equipment; liaise with maintenance as needed.
* Implement continuous improvement processes for efficiency and cost reduction.
Qualifications:
* Education:
* Diploma or Degree in Food Technology, Culinary Arts, Food Science, or a related field (preferred but not mandatory with relevant experience).
* Experience:
* Minimum 2 years of experience in a food production or bakery environment, with at least 1 year in a supervisory or team lead role.
* Hands-on experience with commercial bakery equipment and processes.
* Skills and Competencies:
* Strong leadership and team management skills.
* Good knowledge of food safety, hygiene, and HACCP regulations.
* Attention to detail and commitment to quality.
* Time management and ability to prioritize tasks in a fast-paced environment.
* Basic computer literacy (for inventory and production reporting).
* Problem-solving mindset and ability to make quick, effective decisions.
* Ability to work flexible hours, including early mornings or weekends if required.
