The role
You'll be a hands-on junior leader who can run a section and set standards. On any given service you will:
* Lead a section and keep plates consistent to spec and timing.
* Prep daily: stocks, sauces, reductions; fish filleting, basic butchery; garnish and service mise en place.
* Plate accurately and maintain presentation standards in line with Cavallo's style.
* Support the Head Chef/Sous on the pass when required and help manage ticket flow.
* Train and coach CDPs/commis; give clear briefs and feedback.
* Contribute ideas for specials and new menu development (seasonal Italian focus).
* Manage ordering, rotation and waste control; hit GP targets without compromising quality.
* Work closely with FOH to deliver a smooth, guest-first service.
What you'll bring
* Experience supervising a section in a quality, high-volume kitchen.
* Strong cooking fundamentals and Italian know-how (risotti, ragù/brasati, carpaccio/tartare, roasting and fish cookery).
* Calm service head, sharp palate, and pride in clean, organised prep.
* Confident communicator who sets the tone for the team.
