Sous Chef Job – Scotland - Sutherland Scottish Highlands - up to £55,000 gpa

Our client is an estate with nature at its heart, a vision that is expressed in every touchpoint for their guests. Their food is no exception. With access to the finest local produce from the sea to the hill, their focus is on providing exceptional food in its simplest form using fresh, local and sustainably sourced ingredients. This role will see the candidate embodying this ethos in supporting the Head Chef in the delivery of honest food with provenance at the core. This is a fantastic opportunity to be part of opening a new property within the estate, offering a lifestyle far removed from urban market demand, whilst working in a kitchen designed to the highest standard.

Candidates can expect open fire cooking, hearty outdoor bothy BBQ experiences, family style dining, seasonal highlights, whilst delivering innovative meals and experiences. The chef team is a close knit, supportive group that is growing who all thrive on continuously pushing boundaries for small groups of discerning guests.

Key Responsibilities

1. Implement the culinary vision of the Head Chef in relation to the venue
2. Deliver an interactive “chef’s table” experience for the guests by engaging with them at the point of dish finishing and presentation, explaining each dish and answering their questions
3. Collaborate with the Head Chef in reviewing guest preferences ahead of their planned visit and create dishes and meals that accommodate specific requests, allergies and dietary or faith requirements
4. Discuss with guests on arrival all planned menus and adapt with positivity to any late changes to preferences
5. Partner with Head Chef in the planning of supplies, taking cognisance of the remote location of our venues
6. Build strong relationships with local suppliers in order to access local ingredients of the highest quality
7. Comfortable moving between busy and quiet periods and utilising the latter in a positive way e.g. team development, new menu development etc
8. Supervise the Chef de Partie and other kitchen staff, ensuring that a “one team” approach is always maintained and that everyone works collaboratively to provide the best guest experience, and to support each other
9. Support other parts of the estate as required
10. Embrace the ethos and values of the estate and ensure that direct reports do likewise
11. Behave as a custodian of the carefully crafted culture, taking personal responsibility for engaging positively with all team members and demonstrating respect for their contribution
12. Place a high value on health and safety and encourage others to do likewise

Who you are

To be successful in this role, you will be a passionate chef with proven experience as a Sous Chef or Chef de Partie, ideally within a private Chef environment, or a fine dining ‘Chef’s Table’ set up. You’ll be an excellent team player, warm communicator, confident in interacting with guests and comfortable with the remote nature of a role.

Location: Working across multiple sites in the wild north of Sutherland, Scotland.

Hours: 48 hours per week; permanent; full time

Salary: up to £55,000 GPA

Accommodation can initially be offered if someone is relocating but then it would be expected that the candidate will then find their own accommodation
