About the Role We are looking for an experienced and hands on Bakery Production Manager to lead our Central Production Unit in East London.
This is a leadership role for someone who understands both craft and scale. You will oversee daily production across bread, laminated pastry and kitchen items, ensuring quality, efficiency and food safety standards are consistently delivered as we continue to grow.
This is not a factory environment. It is a structured, high performing bakery operation supplying our own retail sites and selected wholesale partners.
The successful candidate must be comfortable starting shifts from 3:00am when required.
What Youll Be Responsible For Production & Operations Lead daily production to meet output, quality and delivery targets
Manage early morning production shifts starting from 3:00am
Oversee workflow, labour allocation and shift coordination
Monitor productivity, waste and downtime, identifying improvements
Ensure products meet agreed specifications and quality standards
Maintain strong communication between production and retail teams
Team Leadership Lead, coach and develop a team of bakers and production staff
Build a positive, accountable and high performing culture
Support recruitment, training and succession planning
Oversee attendance, performance and shift handovers
Act as the key operational lead on the production floor
Compliance & Food Safety Ensure full compliance with HACCP, food safety and health & safety standards
Maintain production records, audit documentation and traceability
Lead corrective actions and maintain strong hygiene standards
Uphold and improve SOPs across all areas
Commercial & Performance Monitor labour costs and productivity against budget
Analyse production data to improve efficiency and reduce waste
Support stock control, ordering and supplier coordination
Report on KPIs including output, labour usage and cost of sales
What Were Looking For 5+ years experience in a bakery, CPU or food production leadership role
Strong knowledge of food safety, HACCP and compliance standards
Experience managing teams in a fast paced production environment
Confident working with data, reporting and operational KPIs
Highly organised, structured and process driven
Calm under pressure with a practical, hands on mindset
Flexible and comfortable starting shifts from 3:00am
The Ideal Candidate You are commercially aware but craft focused.
You care about quality and standards, but you also understand labour control, waste management and operational efficiency.
You lead from the front and are comfortable being on the production floor.
You take ownership and improve systems rather than just maintain them.
