What do we need?
We are seeking a talented fine dining sous chef who shares our vision to join us at The Peacock at Rowsley. Nestled in the picturesque village of Rowsley on the edge of the Peak District National Park, The Peacock at Rowsley has been a beacon of hospitality for over 400 years. The Peacock is an award-winning, four Silver AA stars and three AA rosette restaurant and hotel, making it one of Derbyshire's finest accommodation and dining experiences.
About the job:
Assist with kitchen management:
Support the head chef in overseeing daily operations, ensuring high standards are met.
Supervise kitchen team:
Lead and guide junior chefs, ensuring consistency and quality across the kitchen.
Ensure food quality:
Maintain top-quality standards for cooking, presentation, and service.
Manage stock and ordering :
Oversee stock, place orders, and ensure ingredients are properly stored.
Maintain hygiene and safety:
Ensure the kitchen adheres to health and safety regulations.
Control food cost:
Monitor portion sizes, minimise waste, and help manage food costs without compromising quality.
Train and develop staff:
Help with the recruitment, training, and development of kitchen staff.
Assist with budget control:
Support the head chef with budget tracking and cost control efforts.
Lead during service:
Be hands-on during service, ensuring dishes are prepared and sent out on time.
