The Role
As Chef de Partie, you'll be a key player in our brigade, supporting the Head Chef in delivering exceptional, seasonal dishes using the finest local ingredients. This fixed-term position offers the chance to immerse yourself in a high-end kitchen environment until January 2026, with opportunities to grow and shine in a collaborative, creative atmosphere.
Key Responsibilities:
-Prepare and execute dishes to the highest standards, focusing on consistency and presentation.
-Assist in menu development, incorporating foraged and estate-sourced produce.
-Maintain kitchen hygiene and safety protocols in line with HACCP guidelines.
-Support the team during service, including mise en place and stock management.
-Contribute to a positive, high-energy kitchen culture.
What We're Looking For
-Proven experience as a Chef de Partie in a fine dining or rosette-starred kitchen.
-Strong knowledge of modern European techniques with a passion for Scottish produce.
-Excellent organisational skills and the ability to thrive under pressure.
-NVQ Level 3 or equivalent in Professional Cookery (desirable).
-Flexibility for split shifts and a hands-on, team-oriented mindset.
