The ideal Chef ill be able to demonstrate: -An understanding of game, and the prep and cooking of fresh game -Experience self-managing, as this is a small operation, where the Head Chef may be working alone -A proven fresh food led background, ideally to a Rosette standard, be it Gastro, Restaurant or Hotel -The position is ideally for an established head chef, although sous chefs with a proven management history will be considered. -A desire to innovate & create, and be excited by local seasonal products -A sound understanding of kitchen management. -Being mobile is a must due to location.
