We are not looking for a traditional Head Chef; we are seeking a highly collaborative culinary leader to join us as a Co-Head Chef of The Scottish Cafe & Restaurant situated in the prestigious National Galleries of Scotland. We are looking for someone with experience in events/catering, who has creativity and passion, and a desire to work with fresh, simple, sustainable and local ingredients. All our Head Chefs work closely with the wider kitchen team to produce consistently beautiful food, made from scratch, that is tasty and satisfying.
All our kitchens buy directly from over 70 artisan suppliers and receive daily deliveries in the growing season from our very own kitchen garden. We have 3 Bee Hives with over 50,000 bees and when nature has been generous we are able to share the honey and the honeycomb with the kitchens.
To join our team you must be familiar with all of the daily operations of a fast paced efficient kitchen and have strong leadership and communication skills. You will be managing, planning and directing food preparation, developing new menu items within our vision and managing, training and supporting the kitchen team ensuring a happy, efficient and knowledgeable working team and environment.

Core responsibilities
* Delivering the very best of food and ingredients across all venues - This includes ensuring the Company Vision and Brand Standards are met with food presentation, costings, speed of service and sustainability
* Always following our Magnificent 7 values for the Kitchen - Fresh, Simple, Fast, Consistent, Good Value, Satisfying and Tasty.
* Ensuring the wage percentage and GP targets are met
* Conduct pre and post service briefings with all team members
* Collaborating with Senior Managers and Directors on menu development for seasonal changes- This includes tracking costings for all dishes on the menu and keeping it updated with price changes and increases
* Maintaining high hygiene and cleanliness standards of the Kitchen
* Managing and developing the Kitchen team
* 44 hours over 5 days per week
* Up to £40K inclusive of tips dependant on experience
* 28 days annual leave
* Must be available over the December & January excluding 25th & 26th December when the restaurants are closed
* Free meals on shift when working over 6 hours
