A Kentish country inn with a lively bar, characterful dining rooms, the Sidney Room for private events, and 11 boutique bedrooms. We're proudly food-led with a drinks list to match: well-kept cask and keg, thoughtful wines (with a soft spot for English producers), classic cocktails done properly, and great coffee. The bar is dog-friendly; the dining room is not—service should reflect this with warmth and clarity.
The Role
You'll be the friendly face behind the bar, delivering quick, confident service and consistent drinks quality. From a perfectly poured pint to a clean, balanced Martini, you'll keep standards high, the bar spotless, and the atmosphere upbeat—those "little moments that make the large impact."
Key Responsibilities
* Bar service: Greet guests, take orders, pour and mix to spec, present drinks beautifully, handle payments
* Beer & cellar care: Pour cask/keg to standard; complete opening checks (glassware, lines run, gas pressures), record temperatures, flag issues early; basic line maintenance and weekly tasks as directed.
* Cocktails & spirits: Make classic house serves consistently (Martini, Old Fashioned, Negroni, Spritz); advise on serves, garnishes, and upgrades.
* Wine & beer knowledge: Recommend by-the-glass; talk pairing with our seasonal menu; champion local/English wines and our rotating draught list.
* Coffee & softs: Produce barista-standard coffees; maintain machines and hygiene routines; craft low/no options with care.
* Guest experience: Read the room, manage pacing and wait times, help with table service during peaks; handle minor complaints positively and escalate when needed.
* Compliance & safety: Follow licensing law, Challenge 25, refusal logs, incident logs; uphold allergen, glass handling and H&S procedures
* Stock & controls: Rotate stock (FIFO), record wastage, complete deliveries and counts accurately; restock and maintain a tidy back bar and fridges.
* Opening/closing: Execute checklists, cash up accurately, secure the premises, and hand over clearly to the next shift
* Events: Support tastings, the Sidney Room bar setups, and seasonal promotions
What You'll Bring
* 1–2+ years' bar experience in a quality pub/bar or restaurant.
* Confident, guest-first service with natural upselling and product knowledge.
* Solid cocktail fundamentals and excellent beer pouring skills (cask and keg).
* Accuracy under pressure: cash handling, POS, and order pacing.
* Professionalism: punctual, well-presented, calm and solutions-led.
Nice to Have
* Barista skills and coffee machine care.
* Working knowledge of cellar routines (line cleaning, ullage/wastage logs).
* Interest in English wines and local producers.
Working Patterns
