Job Description

We launched a new country pub here in Penshurst and are looking for a head chef to take the lead on its ongoing leadership. The concept is country pub and smokehouse with lots of low and slow, hot sauce and New Yorkcheesecake. We wanted to be a little different to the competition in the area. What we don't have is a head chef to lead the project. do you fancy yourself the next Pittmaster of Kent. Under the stewardship of the owners who have much experience in the industry you will help design, develop, source and create a new offer for this historically important pub near Tunbridge Wells.

Key Responsibilities
1. Menu Development & Execution
- Execute a fresh food menu that appreciates local produce, meats, and artisanal ingredients.
- Innovate while respecting the vibe we create (e.g., elevated Sunday roasts, creative small plates, hyper-local specials).
- Ensure consistency, quality, and presentation across all dishes.

2. Kitchen Leadership
- Build, train, and inspire a passionate kitchen team. Foster a culture of ownership, accountability, and collaboration.
- Lead by example during servicemaintaining energy, organization, and calm under pressure.

3. Supplier Relationships
- Source and manage relationships with local farmers, butchers, and producers.
- Champion sustainability by minimising waste and maximizing ingredient potential.

4. Cost Control & Operations
- Manage kitchen budgets, food costs, and inventory with precision.
- Ensure compliance with health, safety, and hygiene standards.

5. Guest Experience
- Deliverexceptional guest experience and ensure guest feedback is second to none.
