Sous Chef Tanera MorOne of our clients is seeking a passionate and driven Sous Chef to join their team at an exciting stage of growth.Based on a remote and stunning 800-acre island in the Northwest Highlands, the large-scale, forward-thinking restoration and hospitality project combines exceptional guest experiences with deep philanthropic and community values. The operation is set within an area of outstanding natural beauty, where authentic hospitality is at the heart of everything they do.As Sous Chef, you will work alongside the Head Chef to help plan and deliver all aspects of kitchen operations, while supporting and communicating the vision of Tanera to both the team and our guests. You will share responsibility for running the kitchen in the Head Chefs absence, working closely with a second Sous Chef.The food and beverage offering is truly unique.

Alongside traditional kitchen settings, much of our cooking takes place outdoorsover open fire and in distinctive locations. With around 15 different cooking spots across the island, youll support the kitchen team in delivering daily crew lunches for 100120 people and catering for up to 30 guests.What were looking for:The ideal candidate will have a blend of the following:Minimum 2 years experience in a professional kitchen at Sous Chef level or above (however, all applications will be considered)Excellent communication and organisational skillsA collaborative approach to working with our teams, including those managing seasonal island produceKey Responsibilities:Support and direct food preparation and delegate tasksCook and prepare meals for both crew and guestsAssist the Head Chef in menu creation, recipe development, and dish innovationSupervise and motivate chefs of all levels, ensuring high standards and smooth operationsUphold and ensure adherence to all food hygiene and health & safety regulationsMaintain the Tanera ethos and standards across all kitchen activitiesManage stock control, ordering, and kitchen inventoryEngage with guests when required, delivering exceptional hospitalitySupport team development and trainingStay overnight on the island when requiredWhat they offer:Competitive salary, based on experience33 days annual leave (including public holidays)Company pension schemeDiscretionary bonusStaff accommodation availableDiversity & InclusionOur client is committed to building an inclusive workplace with a diverse and representative team.
