Golden Bull is Surrey's premium steakhouse, known for exceptional Wagyu, bold steak flavours, and a team that takes pride in every plate. We're seeking a Head Chef / Kitchen Manager who leads from the front—someone who combines culinary excellence with operational discipline and team development.
What You'll Be Responsible For:
* Leadership & Management: Set the tone for a high-performing kitchen culture. Lead by example, uphold standards, and ensure smooth daily operations.
* Team Development: Coach, train, and mentor chefs at all levels. Deliver onboarding, skills development, and performance feedback with clarity and care.
* Operational Excellence: Manage prep, service, stock, compliance, and GP targets. Ensure food safety, hygiene, and allergen protocols are rigorously followed.
* Steak Mastery: Confidently cook and oversee premium steaks to spec—Wagyu, ribeye, sirloin, tomahawk—ensuring consistency and excellence.
* Collaboration: Work closely with FOH leadership to deliver seamless guest experiences. Communicate clearly and proactively across the team.
What We're Looking For:
* Proven experience as Head Chef or Kitchen Manager in a fast-paced, quality-led environment.
* Strong track record in leading, managing, coaching, and training kitchen teams.
* Passion and precision in steak cookery—ideally with Wagyu or dry-aged beef.
* Operational confidence: GP control, compliance, rotas, supplier management.
* Calm under pressure, emotionally intelligent, and solutions-focused.
