The role is predominantly daytime and will involve managing breakfast and lunch services as well as supporting our team of 8 eager kitchen members. A few evening shifts will be required to cover holidays. If you are passionate about producing seasonal food from local producers, thrive in a bustling kitchen, and have a proven track record of working in a similar restaurant at minimum level of senior CDP/Junior Sous then LOST would love to hear from you.## This Role IncludesThe ideal candidate will thrive in a fast-paced environment and enjoy helping the team to maintaining the highest standards of food quality, safety and hygiene systems, processes, planning, inventory management, procurement and staff training, ensuring a motivated and efficient team that deliver on exceptional food throughout the summer months.KEY RESPONSIBILITIES:Flexible & Fun – be able to work effectively under pressure in a friendly but fast-paced environment. Manage a section efficiently, including sometimes the pass in lieu of a more senior team member. Full training will be offered on all sections! Continue to train and support more junior team members. Control Quality – ensure all dishes are prepared to the highest standards of quality and consistency, maintaining our reputation for beautiful breakfast, award-winning lunch and seasonal evening menus. Manage Inventory: order supplies and manage food wastage. Health and Safety – ensure all kitchen activities comply with food safety regulations and health standards, conducting regular checks and training sessions for the team.## Skills RequiredQUALIFICATIONS:3+ years min experience running your own section and some management of staff members is a real advantage. A passion and knowledge of food and bold flavours as well as a strong eye for detailBENEFITS: Predominantly daytime hours with a friendly team in central Brighton.
