JOB DESCRIPTION: Chef / Cook
Location: The Water Rat Public House.
Reports to: Hollie Pope, General Manager.
Role Overview
I am looking for an experienced Chef / cook to assist our Head Chef in the running of our kitchen. This includes shared responsibility in cleanliness and health & hygiene, organization, prepping & cooking. This is a fresh start, offering the opportunity to shape a well-run, efficient kitchen with clear support from myself.
In this role you will have full control of your section on a day-today basis, including ensuring your section is fully stocked and prepped for service and working alongside the Head Chef to ensure high standards and efficiency during service. You will also be expected to keep all areas clean during quieter times.
This role is ideal for a chef who values teamwork, structure and thrives in a fast-paced environment.
The role includes split shifts and straight shifts ensuring the kitchen is prepped, clean and serves the menu for that service with in the service times of; ideally your shifts will be Wednesday - Sunday, with Monday & Tuesday days off.
Tuesday – Friday 12 noon – 2:30 pm
Saturday 12- 8 pm
Sunday (carvery) 12- 5pm
Key Responsibilities
Kitchen Operations
§ Ensure the smooth day-to-day running of your section
§ Plan, prep, cook & deliver fresh and quality food to a consistently high standard
§ Maintain control of the kitchen organisation, cleanliness & workflow.
§ Manage stock control, storage and waste reduction
§ Ensure service runs efficiently during busy periods
Food Safety, Health & Hygiene
§ Work alongside the Head Chef to maintain food safety standards in the kitchen
§ Work alongside the Head Chef to maintain all health & hygiene paperwork (HACCP, temperature logs, cleaning schedules, allergen controls, etc)
§ Work alongside the Head Chef to ensure the kitchen meets all legal and environmental health requirements at all times.
Menu & Food Standards
§ Deliver food that fits the pubs style, brand and customer expectations
§ Maintain consistency in portion control, presentation and quality.
§ Work with the general manager & Head Chef on menu development, pricing and food direction
§ We encourage your input on adapting our menus where needed based on feedback, seasonality and business needs
§ Be resourceful with food, creating specials and reducing waste
Working Relationship with the General Manager
§ Work closely with the General Manager as part of the management team
§ Communicate clearly around kitchen needs, challenges and performance
§ Share responsibility for the overall success of our thriving responsibility

2. Strong understanding of food safety, health & hygiene compliance.
