We are looking for a Kitchen Manager/Cook who is highly self-motivated, has a great attitude to learning and is committed to delivering exceptional standards of food, cleanliness and hygiene to manage our team of cooks within our busy Coffee Shop at Lathcoats Farm. Here at the Bee Shed coffee shop we pride ourselves in offering freshly baked scones and cakes daily using as much local produce as we can within our baking and dishes. This is a perfect role for someone who wants to work for a local family run business and has a passion for cooking and baking.
As a Kitchen Manager/Chef at the Bee Shed Coffee House, you will be responsible for overseeing all aspects of our kitchen operations including:
Accountable for food safety and hygiene within the specified kitchen areas
Training and coaching kitchen staff and ensuring all team members are aware of how food is stored, rotated and disposed of
Design & cost up menus, including regular specials understanding customer base and the importance of local, regional and Lathcoats produce. Keeping abreast of trends & competitions to stay ahead of the curve along with maintaining our core menu.
Prepare fresh foods to an exemplary standard on a daily basis
Be responsible for the costing of dishes & achieving the food margin through portion control and management of raw ingredients
Stocking shelves and ensuring stock is securely stored at the correct temperature and correctly rotated
Ensure that all health & safety directives are followed in the preparation of food. Prepared to lead any inspections such as FSA
Ensure all paperwork is kept up to date including, temperature sheets, daily & deep cleaning rotas & allergens
Management of chef's rotas, ensuring adequate cover of kitchen
Creating an inclusive and supportive team environment where your team feels valued, motivated and empowered to contribute their best work
Management of wastage, ensuring all wastage is kept to a minimum all wastage is accounted for and documented
Has overall management of stock, ensuring stock is ordered via numerous suppliers ensuring we are getting the best price and quality, managing the needs of the business and rotating stock.
Planning & costing for events i.e Mother's Day, Apple Day, Father's Day, Valentine's Day etc
Ensure all chefs are tidy and presentable wearing correct uniform
To excel in this role, you must have a strong background in a similar environment. Previous experience in a similar role is preferred, as well a knowledge of kitchen best practices and food safety regulations. Strong communication skills and the ability to work under pressure are also essential, as you will be working in a fast-paced environment.
