 * Seasonal menu planning & costing and experience of purchasing and profit optimisation.
 * Experience in recruitment & training/developing team and strong people management skills.
 * Sound knowledge of and able to manage all HSE requirements for the role.
 * Experience in managing rosters & hours efficiently.
 * Level 3 qualification in the relevant area.
 * Competent in IT systems.
